    First, this dish looks great and willing to bet, taste wonderful.

    Secound, I want to say that I’m a home cook with no professional experience. All that I have to is in a very humble rookie spirit and tone.

    It looks like the eggplant is the sauce? If so, two points. 1, Eggplant sauce and color is taking away from/overpowering the needed pop of color given by the kale. 2, could it look cool to wrap the eggplant around the squash in the way people wrap avocado around tuna tartar? Then perhaps a drizzle of pomegranate sauce/syrup?
