purple potato puree, braised shortrib, scored trumpets, foie Gras, and a red wine agrodulce. It’s not messy, it’s rustic.

That’s not rustic. You can see you’ve tried to put effort into playing it.

Half the plate it empty, while you’ve got gluey purple goop against the rim on the other side

  2. Not a single item on that plate looks properly executed, and all combined looks like a travesty of good foods ruined.

  3. Is there a purpose/reason for the purple mash as opposed to white. Because the color ain’t doin it for me Chef

Coming off pretty cocky for someone with a broken reduction on the plate. Did you let it go to long and thought no1 on this thread cooked ? Or are we just slapping some broken jus on a plate thinking we know everything ? Cause I know my chef would 100% send this back to me.

  5. Execution can and should be better.

The plating itself Im mixed on but leaning towards pass. Visually this screams desert.

  6. Sounds really good but looks like it was plated on a centrifuge. Pulling more Gs than a jet fighter.

  7. Me knowing nothing about culinary art: wow this is so beautiful

there are just so so many pics posted on this sub that look way worse than this but somehow receive far less scathing criticism. yes, there are some things that could be cleaned up here, but despite the fact that you’ve angered the deep consciousness of this community, i think this overall looks pretty appetizing and sounds like a good dish in terms of flavors.

  9. Unfortunately, it’s all the same color and gets lost when looking at it. As great of an idea as making purple mashed potatoes, maybe this is the wrong dish for that application. A purple mash would look cool with a vibrant colored salmon for example. Center it in the plate a little more. Most importantly, don’t get frustrated by these critiques. We are all here to help each other out. 👍I bet it’s delish. Cheers.

I’m sorry dude but who thought it was a good idea to purée the potatoes? Looks like poo lol

  11. I like rustic but this isn’t it. Rustic also does not mean “make it messy”. So there’s no need for this.

I’m all done with runny potatoes in artsy forms by chefs. It’s just yogurt squirted at this point.

The rest looks decent, cooked well possibly but flat. Not the greatest plating.

  12. Take away that disgusting purple mush and it would probably look not bad.

If you served me that awful looking mash I’d be inclined to send it back.

  13. For a purée it looks extremely lumpy and tacky, not for me, I’m not even going to get into the coloration
