    Rugbrød (Rye Bread but made gluten-free, low carb, sugar-free) and made into Smørrebrød
    Pictured:
    • tzatziki cream cheese with smoked salmon, pickled mustard seeds, dill, red pickled onions, fried capers, and micro-greens
    • pitaya aioli with avocado rose, soft boiled quail eggs, micro-greens, fried basil leaves and shichimi togarashi
    • pistachio cream with strawberry roses

    What I love most about this is that everything here is meant to be eaten, and presentation doesn’t detract from the flavor. Also I love the idea of the glass leaves on there.

  5. My in laws and family would hate these combinations but I love them 😍 alas my Danish in-laws are very traditional when it comes to smorrebrod 🙂

    I’d love to see more combinations!

  7. I’m danish, and while this doesn’t really look like smørrebrød to me, it is very lovely and delicious looking.
    I like the brightness and the whole plate puts a smile on my face.

    This would be the highlight of my month. It’s unique and crafted beautifully. It is one of the most appealing plates I’ve seen on here in a while.

  9. Love it chef, especially the roses, although since we’re critiquing; the avocado rose is a tiny bit square. But regardless, this would bring me back to a restaurant, hotel, or hemisphere to have it again.

    Looks beautiful. Is that sliced avocado in the middle toast? I first thought it was guacamole piped on like icing—the lines are that smooth.

  12. absurdly beautiful. the colors are playful, the arrangement considered and well-balanced. i felt like crying in joy just observing them. these deserve to be mounted on canvas and hung on a wall for future generations to enjoy.

    Wow you make gorgeous food. If you’re not Michelin rated yet you should find a venue that will appreciate your talent and set the mood for your rise to stardom.

    I’ve checked out your profile and posts. All pretty amazing looking. If looks alone could win you a star you’d have already won. I only replied to this because it was the most recent. They all look magnificent
