  3. This looks so dry. Like, the onion “crumble” would just feel like grit in contrast to that eel. What a weird combination of foods.

  4. I’m confused so you have eel filets inside the apple wrapping and then also the two filets lying on the plate? Alot going on there and the choice of plate is a little too heavy for me… looks pretty though chef! I would have assembled the cylinder apple thing to maybe get more height rather than being flat on the surface of the plate. Just my .02
