This reminds me of a cook I used to work with, he was an old dead head and he used to talk about a 1930s Alfredo where they would use stock and egg yolk instead of cream because of the great depression and everyone being broke. Kinda like now. Seeing that I guess Alfredo was invented in the 1920s, I’m guessing it was just an urban legend.

  2. Carbonara is *already* easy. Fry bacon and garlic in a pan, add cooked pasta, mix egg yolks and grated parmesan in a bowl, add to still hot pasta. Add black pepper and some parsley if you’re into that.
