Home style food like this should be served with minimal flair imo. Straight up just have your potatoes right next to your omelette, sprinkle some nicely sliced chives on your omelette, done.

I personally think it looks fine. Maybe some sauce to add contrast if you really wanted to, or as someone above said, a sprinkle of chives.

I’m a nobody with no culinary experience, I just like looking at pretty food.
A fun, bright sauce wouldn’t be bad. And if you wanted, you could cut the potatoes into perfect squares and then arrange them in a group as a square, so you’d have some neat symmetry.

Looks good! Just bring your omelette closer to the middle, and bring your potatoes to touch your omelette. Clean your plate of smudges, garnish with herbs and you’d be right on. If you really want to go the extra mile, you can take a towel/paper towel and use it “plump” up your omelette. This will make it look more full and less folded, also that bottom edge wouldn’t stick out.

Honestly I like it. Maybe have the potatoes touching the omelet. Garnish with a minimal amount of parsley or an accompanying herb on top of the omelet. Solid dish IMO
