hi all!! i’m not a huge cheese person but i do enjoy it from time to time, i got some brie from costco and i definitely didn’t forget about it… anyway i got some bread to try with it and i popped it open and i saw that it expired february 6th of this year.

it looks fine and everything but it smells weird like almost chemically?? again i wouldn’t know, ive only had brie once and it was in my highschool french class like YEARS ago, anyway, id like some advice on what to do and if i can still eat it because i was so looking forward to doing so 🙁

  1. soft cheeses do not keep as long for sure.

    for brie, if you smell it and it smells of ammonia, its not worth eating.

    otherwise, as it ages, it will develop more flavour. This is not a ‘high flavour’ brie to start with. Let it come to room temp, put it on a crusty bread, enjoy.

  2. Not an expiration, just a best by date. Owning a cheese shop one learns that dates are the teams best friend. We would never sell a cheese past a maker or manufacturers suggested date, but we will surely take that cheese home and eat it.

    If it’s ammoniated then it’s probably too far gone. Otherwise enjoy!

    Cheeses in the sunset of their lives are usually pretty good to cook with. This cheese would be perfect to bake, wrapped in pastry of philo and some type of sweet topping.

    Impossible to advise without seeing the actual cheese but the date isn’t really an expiration date, soft cheeses can spoil before or after whatever date they have printed on but it depends on how it was kept and how ripe it is. Ammonia smell would be bad though.
