Beet tartar could be delicious with the right fish.

The drips look messy, like an accident that needs a wipe but overall I like this. Don’t take blurred photos, those of us in glasses hate that.
Also, I’m all for innovation but where do we draw the line at calling it salad?
It’s cold smoked raw beets, instead of raw beef, right?
Hot smoked whole would cook them, I think eat better, but certainly sounds good.
