  1. To me this just looks like a collection of garnishes and sauces rather than a complete dish. Perhaps getting some of that charred eggplant would bring it together?

    The meringue needs to be done any other way. Flavour sounds good, it just looks like a 2yo with a tube of toothpaste got carried away on your work.

    Very cool use of eggplant! Sounds like a super interesting and unique combination. I always love a good blend of savory and sweet, and desserts that are on the less sweet side. Keep making different stuff like this!

    O really like the concept and creativity!
    I do feel like it could use another element to give some texture and elevation. Some sort of coral tuille maybe?

  5. I’d love to eat this. Those flavours in those forms sounds really intriguing. Very avant garde plating, which I’m a little iffy on, especially the meringue toothpaste swirl, but then again I think eggplant icecream probably suits the avant garde style.
