I’d rather see the scallions in/on the carrots and/or potatoes as opposed to covering up the ballotine. Should let it be the star it was born to be.

Those schmears need to go, especially with those empty middles. Just put a nice blob down and put the food on top, no need to play with it once it’s hit the plate.

Your username is a good place to start in describing the plating here. Firstly, roll your ballotine much tighter, the technique is poor. The pile of potatoes is unsightly, as is the smeared puree. Create a nice circle of puree on the plate, plate the potatoes in the centre of your circle of puree, and your properly sliced chicken on top of the potatoes. The addition of a nice dark jus would help in my opinion, as would a garnish that adds some acidity or sharpness to the dish.
