

Sofia is made in Indiana by Capriole. It is young, soft-ripened with a layer of vegetable ash underneath the rind and marbled within. Humboldt Fog is made in California by Cypress Grove. It is also soft-ripened and asher with a single line distinctive within.

the first one looks like a geotrichum rind, so probably sofia. i’ve slowly strayed away from penicillium

I like them both but Capriole is very scarce these days. Humboldt Fog is everywhere.
Ugh they’re both so good!! If I HAD to pick it’s Humboldt Fog but I hate you for making me choose lol
