seared scallops, branzino a la nage, sweet corn puree, chive oil, lobster butter sauce, charred lemon, and roasted mushroom, tomato and Fava bean salad. I paired this with a Sicilian catarratto. This is probably one of the best dishes I have ever ever made.

    Looks delicious! The sweet corn puree and fava beans with chilli combo is fantastic with scallops.

  3. This dish looks awesome. Really love the colors and plating. The only small thing I’d like to see personally is a bit of a harder sear on the scallops. Really though I think this is super creative and beautiful to look at.
