    (Disclaimer, not a pro chef, just love food) Those little crisps/tuiles look so inviting and crunchy! I think I’d want a bit more of that green sauce. I also think the fish and slaw seem a little visually “washed out” on a light plate — maybe a dark blue/gray the color of the mackerel skin would make your color palette pop more.

    I really wanna eat this. I also think it could benefit from a darker plate and maybe a little more sauce.

  3. I’m usually all good with giving details to ingredients, but specifying granny smith feels really jarring to me. Possibly as I see them as a second choice apple for when there’s no pink ladies.
