was just served this cheese in italy, tastes like a mix between a really mild brie and cheddar, had the consistency of a really soft cheddar, any ideas??

    Looks and sounds like Formagella Bergamasca, a native of the Lombardy region of Italy (which contains Bormio)

  2. Looks like butterkäse color and texture wise, but the rind seems a bit much. Obviously not an Italian cheese, but you never know.

  3. Brits be like: The texture is 1/5 Cheddar, the taste is perfectly balanced between Cheddar and Wensleydale and it melts like frozen Cheddar on Sunday roast.
    What cheese is it?
