    Why potato skins; using waste, or maybe more neutral flavor than onions?

    Looks great; Would devour, but two observations:

    It appears to look like a lot of fat around the rim of the plate, unless that’s a sauce – either way, looks broken. Also, the short rib could use a bit of glaze.
