As a Tex Mex lover, I’ve been really enjoying seeing people’s taco salads, healthier nachos etc. I was inspired to create a big ol’ taco salad from this sub and this one turned out delicious.

Here’s my take! It was EVERYTHING

Ingredients:

– Romaine lettuce
– Ground beef, cooked in skillet
– Trader Joe’s pico de gallo
– Trader Joe’s mozzarella cheese
– Diced yellow onion (raw)
– Sliced avocado
– Trader Joe’s creamy ranch on top

I would usually use shredded Mexican cheese for something like this, but I found the mozzarella was something different and was delicious. Also way lower in calories!

This was SO FILLING AND YUMMY; I was full for hours. 🌮🥗

    **EDIT: I accidentally doubled the ranch’s calories.** It was 79 cals, not 140, making this meal just 549 calories!
