I’m on a 1500 cal/day cut right now and it’s been super rough, but I have a massive sweet tooth and I’m also a huge volume eater, so these have been a lifesaver for me. Peanut butter caramel protein ice cream! Super simple to make for the ninja creami.
Ingredients:
– 160ml fat free fairlife
– 240ml unsweetened cashew or almond milk
– 15g peanut butter protein powder (It is a MUST that this tastes good. My recommendation is Ryse skippy peanut butter powder; a few extra calories, but for the taste it is so beyond worth it.)
– Dash of salt
– 2g xanthan gum
Blend it up and freeze for at least 8-9 hours. I know everybody says 24 hours, but after extensive testing (AKA I always forget to make it in the day, make it at midnight, wake up 8 hours later and spin it) I have found it to be perfect. It is a little crumbly in this one because I didn’t follow my own process and forgot to respin it once; if you respin it comes out perfect! So..
After frozen, spin it once on lite ice cream, then respin. Dig a hole in the middle all the way to the bottom and add as much of one crushed up caramel flavored rice cake as you can. The whole thing might not fit, so add a bunch to the top and then just eat the rest lol. Comes out to 190 calories, 19g of protein! There’s definitely a better way to make this, but I can’t afford sacrificing my calories for it so this is the best thing I’ve found; honestly better than Nick’s or Halo Top to me so it is totally worth it. And if you omit the rice cake, you get a pure peanut butter ice cream for just 140 calories which also tastes great in and of itself!
