Got me looking at the chives very closely thanks to some other guy on r/KitchenConfidential.
Traditionally they are paired with a thick red dipping condiment made with vinegar & sugar like Heinz or Sweet Baby Ray’s.
This plate needs more sauce.
Either the fancy dairy product pictured or a 2nd one.

I’m looking at this and while it looks well executed, my brain is asking me if I’d just like it better without the roe and creme fraiche and just a standard dipping sauce, ya know? Like pub food.
