So we got this Taleggio in the shop today. We aren’t used to it looking soooo fuzzy; and we are debating if this much fuzz is too much fuzz.
Help?

    That looks perfect to me, if anything less fuzz would have me worried about it being tasteless and under ripen.

  2. I get taleggio like that often. I just wipe it down with a cloth for looks but it’s perfectly fine otherwise

    Normal but be careful not to drag the knife or wire through the blue fuzzy so it doesn’t grow on the edge of the rind/paste after it is wrapped. Would be a bummer to have to pull any cuts before the sell by date.

  4. Oh that one should taste amazing! Little wipe down to get the outer growth off and then ready to go

  5. Looks perfectly ripe. If you cut a Taleggio and the rind cracks and paste oozes it’s past its peak.

  6. Yep! Totally fine. If presentation matters though, I usually wipe off excess mold with a towel soaked in vinegar

  7. This is just fine. Take a towel dip into hot water and wipe down the cheese block on the outside. Gently. Using a pitcher of hot water and a sharp knife this soft cheese can be cut into servings. Remove the exterior rein for better plate appearance and taste.

  8. Not « normal » as usually the mushrooms don’t develop as much but looks okay. Difference in taste may vary very slightly but nothing that matters.

    A team of cheesemongers? Needs to come to Reddit with a question on something as everyday as taleggio? Is this a Murray’s kiosk in Kroger or something? Lol.

    Haha yeah, our older gentleman who’s been in the shop for 7+ years hadn’t gotten one this ripe, so I just figured we’d phone in, lol. The rest of us are only a few years into the cheez bis.

    I guess we get ours pretty ‘young’. I figured we’d be in the clear: (get plenty of other types that look 10x as ripe on the usual basis) but if he’s confused, haha we start questioning ourselves a bit. So figured I’d get an outside opinion.

    Cool! Excited to try it again and see how it compares taste wise to the usual.

    Super normal. Just give it a little pat (PAT, not rub!) with a dry paper towel for aesthetics, but it’s fine.
