    How long was your braise? To me it doesn’t look like your fat has rendered very well, but that could just be angle/lighting. The flavors you put together sound wonderful, but the seaweed salad is a little heavy handed for me.

    I like the presentation and your choice of plate size, although an off white may better contrast your sauce.

    Looks good! How so you get the salad so green? I used seaweed from my local asian market but it was much darker
