Cool idea with the beets and potatoes first off. I think centering the potatoes with whole roast beef instead of shredded could be an improvement. You could use a piping bag or a technique like the quenelle to add height and white space to this dish.

I’m curious what your thought process here. Did you want beet for flavor or color?. The color and texture combo is unappealing (just my personal opinion).
