tbh it’s kinda upsetting. It looks less high-end than it does mass-produced. The katsu looks like a McDonald’s hashbrown. The way the curry(?) is holding its shape on its own is disquieting. The strands of vegetation strewn all over look like alien tumbleweed. The whole package is just weird and sort of uncanny valley-esque
And katsu should really be served sliced

Your crispy golden crust looks great. You’ll probably get some comments though that this not really fine dining food.
I agree that the meat would look better sliced, and I agree that the scattered vines are not adding to the dish.
Maybe very thinly sliced scallions for a garnish?

I think pork katsu deserve a fine dining spot, i just think u should make it stand out more! Make it thicker. Maybe more panko in the breading? ( looks a little too thin, which can make it look store bought. I think the sauce looks nice but maybe serve the rice outside the plate in a small Bowl. Also the spreading of the microgreens is a bit all over. Better to pinch it together and center it. Maybe on the katsu?
