      I don’t think anyone here goes nuts on portion size. Are the disk and rectangular block both celeriac?

      This is gorgeous, the only thing I might try is instead of celeriac for the disc maybe a bit of roasted sweet potato. It would add another nice color element as well as added sweetness. Just an idea, this is already looks fantastic though OP.
