  1. Very cool concept and design for the dessert, but I would lose the microgreens (unless they are chocolate made to look like micros??)

  2. yeah, as another commenter said, micros gotta go. there isn’y enough whimsicality with how they’re placed, and there seems to be no rhyme or reason to it.

    try doing a one-directional ‘hearth’ around the yolk with micros, it might help the center find definition while retaining the micros, it you really want them

  3. I’m sure it tastes great but first thing I thought when I saw this was “tomato in chowder”. Agree with the others who suggested to remove the micro greens. Maybe use a smaller serving vessel if you were hoping to make the sauce look more like egg white.
