  1. That’s a “short” bite for such a large vessel. Lining up the “greens” on top of the rib isn’t doing it any justice. Greens next to / topping the arbor blurred blanc would carry it. Nice combination of delights!

  2. I love the components of the dish flavor-wise.

    However, I am not a fan of the presentation of the buerre blanc sauce. On first glance with how bubbly it is, it reminded me of foamy vomit.
