
Pan seared; sugar snap peas; shiitake mushrooms; roasted butternut squash; pickled Japanese salad turnips with a miso broth. Furikake and radish micros for garnish.
Don’t really have time at our restaurant to plate very exotic, due to space, plates, and quantity. But any constructive comments would be welcome. Thanks in advance!

More contract between the halibut and the background needed. Maybe a green sauce instead.
It looks delicious but halibut looks clonky and a bit like garlic bread.
Is it served with a spoon?
