– Homemade Shokupan Bread
– JiDORI Chicken Thigh coated and deep fried in fresh Nama panko and duck fat
– Homemade Tonkatsu sauce
– Cone cabbage tossed in a little rice vinegar

A lot of work but well worth it.

    The crust is good for you and it makes the sandwich look complete.

  2. Some constructive criticism, you see how there’s a decent separation between the chicken and the breading in the cut picture?  That is sometimes due to the eggs being too thick.  Try thinning out the egg wash with some water and put it through a fine strainer before you use it to dredge.
