Last fall, my friends and I visited Mexico City. Although I'd lived in Texas for a good chunk of my life, this was my first time visiting Mexico properly (I spent half a day in Juarez which…I don't really count). What a beautiful city! Although the weather was a tad humid, the air felt cool enough for the moisture to feel nice, not suffocating. And of course, the food was fantastic.

I had learned about this dish a few months prior, and being a huge fan of seasonal/celebratory dishes, I was set on trying it.

Chiles en nogada consists of a poblano pepper stuffed with a picadillo, including meat, fruit, and various spices, giving it a sweet and savory taste. It is then topped off with a walnut cream sauce and garnished with pomegranate.

The green of the pepper, white of the sauce, and red of the pomegranate represent the colors of the Mexican flag, and the dish is popular around Independence Day, which is during the pomegranate season.

Now, to be level, I'm not the biggest fan of sweet and savory flavors mixed together, and unfortunately, the dish I had leaned a bit too much towards sweet for my personal taste. That said, it was still quite good! The stuffing was very aromatic, but above all I loved the texture. I've always been a fan of poblano peppers, and the sauce (light in texture but rich in taste!) combined with the occasional pop of the pomegranate arils was a treat.
