    If I can give some advice, get more liquid in your puree, you’re gonna need some carbs too

  2. Try pressing down on the salmon flat with your hand or spatula for the first 10-20 seconds immediately after laying in the pan. This will help you get a much more evenly crispy skin

    The clear plate is not it. I strongly dislike the schmear.

    Whatever the white sauce or paste is smeared on the plate doesn’t look appetizing and the clear plate isn’t doing it any favors

    Overall your playing construction isn’t horrible but the elements of the fish need improvement

    The mushrooms are cut fat too big and don’t look nearly enough cooked, same with the chunks of pepper

    The lettuces and the sprouts look very out of place I would swap them both for a more tasteful garnish like micro cilantro or other micro greens such as bulls blood or pea shoots
