I did this all mainly so I could try Roquefort with my fancy Philippine chocolate per a past post of mine, but I left the Roquefort out too long. My first time trying Saint Angel and wowwwww! Also first time with mimolette; I understand the controversy and I wish I had the sense to cut the rind off before plating it. Otherwise it's fun.
