
Hi mates, i contiue learn and trying culinary plating, what do u think bout this plate? cucumber, some emultion of lemon and mustard on base of plate, little mango cubes, mango mixed with tajin, flowers, reverse spheriphications of home made ponzu mixed with oister souce, coriander oil and leaves of oxalis triangularis grown by me

This dish looks both underdressed and underseasoned despite sitting in a pool of vinaigrette. The long strips of cucumber look unyielding to eat. Is this salad served with a knife and a soop spoon?
Homemade ponzu with Oyster sauce reverse spheres…. So you mixed soy sauce yuzu juice and Oyster sauce with sodium alginate but why? Maybe if they looked like little Boba or something that would be cool but I feel like the execution leaves something to be desired.
