A little timbale custard in the middle. Micro greens around that. Prawn head on top.

Everything about this bothers me.
1. There’s no Chawanmushi visible. So either the plating is obscuring the good part of the dish, or the title is bad.
2. “Undressed salad with a shrimp’s face on top” will be the most-skipped dish, maybe ever.
3. I challenge you to find a room where most of the people eat any part of (fried?) jumbo prawn head. The tamale is delicious, the shells are not. Inedible garnishes are not plating, they’re decoration that has to be removed before eating.
4. The image is cropped *terribly*. Taking a pic with your phone while holding the food in the other hand? Do what you gotta do. Don’t even get the plate framed correctly before posting? WTF?

If you’re going to put that much salad on top of a chawanmushi, it would be nice if it was dressed with a vinaigrette. Looks like dry lettuce, though maybe that’s just the photo?

I eat shrimp shells and heads. But where is the custard? Also, dress your greens even if it’s lemon juice and salt. Something, anything.

I love a good prawn head but you didn’t mention using actual spot prawns so it’s seems like it was added just for funsies. Where is the chawanmushi? Why is it buried under a micro forest (if it exists)?
