Skirt steak marinated in olive oil, lime juice, garlic and salt for a few hours. Cooked on a flat top to medium rare and seasoned with Dia de la Fajita on both sides. The tortillas were toasted on the same grill with some queso fresco on them – they look pretty raw on top but they’re slightly charred on bottom. The tacos each got some combo of: steak, more queso fresco, avocado, green onion, cilantro, thin red onion, pico.
