It wasn't all processed cheese logs today (though there were three 40+lb blocks of Black Diamond cut and rwady to go…… ) This was very nice. Still has that goat tang but the age (10+ months) mellows it out some. Nutty and a bit sweet even, full of tyrosine crystals. Good stuff.
