Because of Reddit I ordered 2 cans of cougar gold – one to try and one to age. I opened up a can that's already been aged a year this week and made mac and cheese with it. It came out great although I think I'd probably add another cheese to make it creamier siknce the Cougar is aged it came out a little dryer than anticipated. I kept it simple and made a sauce with roux, cream, milk, and the cheese. I tasted it ahead of baking and it was delicious but then made it fancy by adding bacon bits, and corn, corn bread crumble, baking and then topping with fresh jalapenos.
