[Homemade] Guinness chocolate cookies for St. Paddy’s (recipe in comments)

  1. 11.2oz Guinness Extra Stout (1 btl)
    4oz dark brown sugar

    4oz unsalted butter (room temp)
    4oz granulated sugar
    1 large egg (room temp)
    .5T vanilla extract
    175g AP flour
    50g cocoa powder
    1T milk powder
    .5t baking soda
    .25t salt
    200g white chocolate chips

    – Reduce Guinness + brown sugar over medium heat. (do as much as possible to knock out carbonation: high pour, rigorous whisking; overflow is sudden and messy). Reduces to 1/2c. Chill.

    – Beat butter and granulated sugar until creamed
    – Mix in Guinness reduction and vanilla until incorporated
    – Beat in egg on low
    – Mix in dry ingredients until incorporated
    – Fold in white chocolate chips
    – Allow batter to chill in fridge for 2h
    – Preheat oven to 350F
    – Scoop and roll into balls (roughly quarter-sized in diameter), spaced onto silpat or parchment
    – Bake 20 minutes or desired chewiness/crispiness
