I had half a Costco-sized package of havarti cheese starting to smell a little funky, so I used it all up in a queso dip.

    First made a roux with butter, a little better than bouillon (chicken) and flour. Slowly whisked in the milk. Added some black pepper and cumin. Added in the last of a jar of Mateo’s salsa. Sliced and melted the havarti in batches. Garnish with a bit more cumin and black pepper. Delicious and no wasted food!

  2. Most peoples reaction to a food item starting to smell funkier thank usual is to throw it out my guy 🤣
