    Technically, portabello mushrooms are fungi, not vegetables, but that’s beside the point…

    I love mushrooms and spinach as a combination! You could always slice the mushrooms and sautee both mushrooms and spinach in a pan with a little olive oil, garlic (sliced or minced) and salt/pepper. Add the garlic a little towards the end to not burn it, and toss in as much spinach as you like at the very end. Allow the spinach to wilt as much or as little as you want.

    You can also do spinach and mushroom omelettes! Add a bit of parmesan for extra depth of flavor!
