  1. The plating of the actual food is exquisite. Well done.

    The ash (or whatever it is) doesn’t work for me at all. I think, in much smaller quantities or a different approach, it could be a cool addition. But the way it is presented here makes me not want to eat your food.

  2. Everything looks fantastic however the ash reminds me of a fuzzy black mold and is a tad off putting. Aside from that, I love the vibrancy and colors of the rest of the dish. I wish I could take a bite!

    Without the ash it looks perfect to me. The ash isn’t consistent so it comes off messy. But beautiful job on the main components.

    I love your plate. I would, perhaps, have no problem with the ash if the plate was smaller. And as others mentioned, more consistent. This is beautiful.

  5. Maybe run the ash through a sieve and kind of tap the sieve to evenly distribute? Unless the particles are too large…

  6. It’d be neat to play around with a stencil and that ash. I think it would be cool to contrast the natural shapes of the veggies with a bold geometric pattern on the ash.

  7. The plating is beautiful (although perhaps the sprigs could be a little smaller), your only issue here is–as everyone else has said–the ash being inconsistently applied. It’s in a middle place–both too messy and not messy enough; push it to one extreme or the other and you’ll be golden. A plate without a wide/steep rim like that would help you a lot here.

    How fun! Grow your own is best. Smoke house yogurt, is that a brand? And the ash… I’ve never made this. Is this toasted and powdered? It would be fun to write something clever in the ash to naysayers. Hahaha. Looks very nice. Veggie Demi… cute. Make pretty ash out of those dehydrated beets!

  10. I think the beets, which should be the star of the dish, are too buried – you need less herbs and less flowers. The purple should be the main colour of this photo rather than green and red! Also is the herb dill; if so there’s way too much, it would be overpowering.

  11. Is this a special under construction? Smoked yogurt and all other components are really interesting and on a menu would scream to me “*someone here knows wtf is up*” and I would order on principle. I love beets, and veggie dishes. However…

    If i ordered beets and got this I would be confused. Looks like a lot of dill. Stencil could bring that ash to a 10/10, really cool and creative thinking.

  12. In addition to what others have said, the ash has some stragglers on the “clean” side that could have been solved with a wipe. If you’re going to do “Plating™” you’ve gotta keep the clean parts of the plate spotless (and no visible water smear-droplets either).

    Otherwise it looks pretty and I love all the components so I’d order it 🙂
