This wedge at a cheese counter had a Lamb Chopper sticker, but the wax is orange-ish and the printed label says Ossau Iraty. I’ve never had Ossau Iraty, but am thinking the label is correct the sticker was a mistake. The cheese is fantastic, though.

The lamb is so swag
It’s probably Lamb Chopper. Sometimes the wax can turn orange. I’ve never seen a waxed Ossau Iraty. I don’t think that is in the AOC standards.
That’s not either of those cheeses! Ossau Iraty is never waxed like that, and Lamb Chopper is white. I think you have a medium aged gouda, judging from the wax and the color of the cheese. I’m glad it’s good though! I just don’t want you to be disappointed if you try and get it again.

Cheesemonger here. I’m willing to bet it’s lamb chopper and you got it at a bargain price. I sell it for $34 a pound. Lamb chopper is usually white but like with any artisanal product it can vary. In fact I have some now that are that exact color.
That’s definitely not Ossau, I cut it about an hour ago.
