Despite the fact I have a midterm tomorrow, I still needed to suppress my hunger. Tonight I made Lentil Bolognese, since I have started orthodox lent today, what better way to start than to make a lentil based dish that’s packed with protein, fiber, and nutrients!!

  1. The black “beluga” lentils are great for this, as they remain pretty solid whereas other lentils may go a bit mushy.

  2. Looks great, how is the texture, i tried it once or twice but it always feels a bit mushie.
    I have changed to a mix of minced beef and chick peas.
