Castello isn’t bad for the money! I use it all the time to supplement my blue cheese dressings both home made and store bought. As there is never enough cheese.
I also like to eat it on its own.
Favourite pairings:
Honey
Maple syrup
Chutney
Jam
Glass of Vidal ice wine (absolute GOAT pairing)
Glass of port (also great)

you pair that with a wooden spoon?
try some grapes on the side and/or maybe pair it with fig mustard (or similar condiments, the sweeter, the better, imho), then you can enjoy even a generic blue cheese 🙂
other recommendation: roast some minced garlic in a sauce pan, add the cheese when garlic is light brown, let it all melt, then add some cream and some milk, whisk it all together and cook some pasta. add the pasta to the sauce pan, mix it and then some ground black pepper to your liking.

Hey OP, just a quick friendly cheese tip – by leaving almost all cheeses, while still packaged, out of the fridge for a while before consuming (a day or two, or more, depending on room temp and cheese type), they will mature and improve drastically in flavor. This works for both cheaper and more expensive cheeses in my experience.

I really marketside blue cheese. Sometimes more than more expensive stuff. The only thing I would improve is that the last inch around the edge never has any mold.

As much as I love high quality AOP Rocquefort, I often come back to Castello Blue or Danablu or some other supermarket brand blue cheese. Of all the supermarket choices, it is by far the tastiest one.
That and extra extra extra old Goudas like Old Amsterdam or that crumbly old goat’s cheese thet Lidl offers sometimes.

It’s a decent cheese. It always goes well with pear or grapes.
I like the wood spoon with it. I like a hint of bamboo with my cheeses. You could always invest in a ceramic knife if you don’t like metal touching your food. Metal utensils always change the flavor of my hot chocolate and soups.

you should have bought some dades as well and yeah some stuff is still good on blue cheeses in the “groccerystore” BUT the difference on prices between a real cheese shop are not that big. So you may ask a ounce less there.
