Needs some color, maybe add some beet juice to the onion pickling liquid or swap the Serrano slices with Fresno slices. Tomatillo consume sounds delicious.

Sounds absolutely DELICIOUS. I would eat this in a heart beat. Plating wise I’m really missing color. I also would keep the furikake only on the top of the dish and not around it to keep it cleaner.

Fun food…I’m not a fan of the speckled plate. Maybe a solid dark color? Black maybe ? Would have to experiment

I would eat that all day every day but the food blends into the plate try something darker also the placement of the onions looks too deliberate try to make those look more random if you can
