  1. I love the presentation and the flavors sound great. Whatever that herb is looks good too, by adding some green, but I feel they would be unpleasant to eat. I imagine them sticking to the roof of my mouth or getting caught between my teeth. Maybe try candying them (eggwhite wash, dipped in sugar) to give them some bite?

    Looks great, sounds good, flavors make sense.

    Not sure everything needs critique or if this sub is automatically such a request but I have one minor comment.

    I would consider blood orange. The variety of color in the segments is beautiful and I think the slightly higher bitterness would work really well with the tea/bergamot/dark chocolate flavors.

    Nothing _needs_ changing but if you wanted one thing to try a different way there it is. Beautiful dessert.
