
Ingredients:
– 1 cup of rolled oats
– 1 cup of unsweetened soy milk (I recommend something that is just soy beans and water, like Trader Joe’s or west life)
– 2/3 cup of water
– 1 tsp vanilla extract
– 3 tbsp brown sugar
– 1/3-1/2 cup frozen blueberries as desired (fresh blueberries work fine, but I enjoy the syrup that frozen blueberries create at they thaw)
– Finishing salt (I like Maldon’s)
Instructions:
– Combine oats, milk, water, and vanilla extract in a small pot.
– Cook on medium-medium high heat, stirring frequently.
– When oats are cooked through and creamy (with majority of liquid cooked out), remove from heat.
– Add oatmeal to a bowl and top with brown sugar and blueberries.
– Allow heat from oats to melt the brown sugar and thaw the blueberries before stirring together.
– Top with finishing salt to taste, and enjoy!
