You do realize that people outside of Japan have managed to figure out how to cut tuna into blocks, right? Theres nothing inherently Japanese about the technique of using a knife.
This isnt inherently italian, either. Theres zero Italian chefs that would see this plate and not hit it with a little olive oil.
It sounds like youre using a lot of words you dont understand to explain what were seeing is a dry crudo.
Your brunoise is wonky as well. Fix that.

This looks good, and I like a little more juice, too, like others have said, but believe you when you say it’s juicy.
Just want to mention a crudo preparation I also love that I don’t see very often, using stonefruit. Try it next season, with hamachi or tuna.
Also love the buddah’s hand! The coolest looking fruit.
