Recipe:
Ingredients
2-3 Bone-in Chicken Breast
1 Onion diced
3 Celery stalks diced
2 Green Bell Peppers diced
3 garlic cloves diced
Flour
6 cups of chicken stock
White Rice
Seasoning for the chicken: Cajun Seasoning, Garlic and herb Power, Paprika, Black Pepper, Onion Powder, Cayenne Pepper (a little depending on how spicy you like it). DON’T USE SALT. The Cajun seasoning is enough.
Sear the chicken breast on both sides (don’t cook it fully) with some butter and olive oil, remove the chicken breast and set it aside.
Add in the diced veggies to deglaze the pan and cook them down, add a pinch of the same seasonings used for the chicken to the veggies as well
Once the veggies are cooked down add in about 1/3 cup of flour or more depending upon how thick you like the broth, mix in the flour and cook it for about 3-4 minutes
add in the chicken broth and bring it to a boil, once it’s boiling add the chicken breast back in, turn the heat down and simmer for about and hour, the chicken should be shredded before serving. Cook your rice on the side and enjoy 😊
