
This was a really hearty, cozy meal for a snowy day, with a bit of brightness 🌞

Ingredients:
frozen buttermilk biscuits
1 1/2 cups chicken stock
1 cup whole milk
3 Tbsp. all-purpose flour
1 1/2 tsp. poultry seasoning
1 chopped small onion
1 cup matchstick carrots
3 Tbsp. butter
2 cups shredded rotisserie chicken
1 cup frozen cut green beans
2 Tbsp. chopped fresh flat-leaf parsley
I also used non-measured amounts of Summer Savory spice mix, sea salt, and of course turmeric + Parmesan.
Directions:
Step 1
Prepare frozen buttermilk biscuits according to package directions.
Step 2
Meanwhile, in a large bowl, whisk together chicken stock, whole milk, flour, and poultry seasoning. Cook chicken pieces with a splash of olive oil in a large saucepan for about 8 minutes on medium-high heat. Add onion and carrots + butter to the saucepan over medium-high heat until softened. Slowly whisk in milk mixture. Bring to a boil, reduce heat, and simmer, stirring often, until thickened.
Step 3
Add in the frozen vegetables, and flat-leaf parsley + Parmesan and let simmer a few more minutes. Season with sea salt, fresh parsley, and more Parmesan! Serve topped with biscuits.
