These apple muffins turned out very fudgy and yummy so I thought I'd share the recipe! My mom loved them too, we ate the whole lot

  • 1 egg
  • 100g low-fat yogurt
  • 70g apple puree (I just blended peeled apples)
  • 60g oat flour
  • 25g protein powder (I used vanilla soy isolate)
  • 40g granulated sweetener of choice (Adjust to taste)
  • tsp baking powder
  • 1/2 tsp soda bicarbonate
  • tsp cinnamon
  • tsp ginger
  • pinch of clove
  • pinch of salt
  • vanilla extract

Blend all the ingredients together, and mix in:

  • 100g apple, peeled & shredded (roughly squeeze out the juice)
  • 15g walnuts, chopped

I baked at 200°C, No Fan, for 30 minutes. These muffins have a higher water content so they need a bit longer. Yours might be done sooner (my oven sucks), toothpick test should suffice.

Made exactly 6 muffins. Each muffin is about 55g.
