This is about as sharp as Tillamook medium. I was hoping for so much more.

The Tillamook extra sharp is very good. I'm looking for something even stronger if possible. What should I try?

    I also don’t enjoy Cabot. I don’t know what all the rave is about. It lacks depth and flavor

    Aged reserve cheddar from Aldi (in the gray and white wrapper) may be what you’re looking for.

    I agree with anyone saying hooks 10
    Year cheddar! Or Widmer’s 10 year. That’s the sharpest one I’ve had.

    English Coastal cheddar

    The first 2 are available in most grocery deli or cheese aisles. Third used to be carried by CostCo.

    It’s crazy how much worse Cabot and Tillamook have gotten. Rubber and no flavor. What ever happened the the crystals?!? The flakey goodness?!?

    Even their “two year” aged white cheddar tastes like it was made last week. Huge bummer

  6. Cabot’s Clothbound Cheddar is what you’re looking for.

    Otherwise the only Cabot cheese I’ll eat these days is their Wickedly Habanero.

    You’re looking for reserve cheddars . 1000-1200 days.

    You can also find things like 15 year cheddar. Thats too much for me though, way too bitter. But the 1000-1200 day range is literal perfection.

    You’re right this definitely isn’t it, try Costco. I know everyone says don’t go for mass produced but if you’re just looking and willing to try other Cabot, there is a white cheddar aged 3 years in a black wrapping. Grew up making cheese toast with it and when it’s warm and slightly melty, it’s freaking PHENOMENAL. Give it a try!

  9. Rat Trap Cheddar XXX Colosse Cheese Pulaski NY. Bought five pounds every year we went steelhead fishing in the snow in the Salmon River. Made Mac and cheese casseroles that I carry with me to this very day.

  10. Most of the small town creameries in Wisconsin have excellent super sharp cheddars.

    Burnett Dairy, Cady, Comstock Cheese and Ellsworth creameries are great if you’re near and I believe they all ship in the winter.

  11. The problem is that “Vermont” cheddar has replaced “New York” cheddar in most grocery stores, especially in the mass produced national brands. If you can find Cabot seriously sharp NY style cheddar, it blows the Vermont seriously sharp out of the water.

  12. Try costco coastal cheddar. Made not too far from Cheddar gorge and is ok sharp. Not UK farmhouse level, but still good and well priced.

    I find extra sharp to be sharper than seriously sharp. Your best bet is to get some decent extra sharp and forget it in the back of the cheese drawer in your fridge for about 2 years.

    My favorite widely available is the Black Diamond Grand Reserve (green label) aged 3 years. It’s wonderfully sharp and crumbly while still becoming creamy when eating. Solid daily driver and I like it better than the original Seriously Sharp (because it changed big time…)

    Sharper yet? Their Vintage Reserve, aged 5 years. Heavy on the sharp and plenty of crunchy tyrosine crystals throughout.

    I’m sure there is better/ sharper out there, but these 2 are usually available in grocery stores with large cheese selections. The Vintage is hard to find but I find the Grand Reserve often.

  15. That’s a good everyday all-round cheese, the black covered Cabot aged Cheddar in Costco is a superior beast.

  16. I now use the coastal cheddar from Costco. I used to really love Cabot’s cheeses…the clothbound being an absolute staple in my pimento cheese.

    Look for a cheese that has been aged a long time. The longer age is the sharper it gets.

    If I’m just grabbing one on a regular grocery store run I go with Old Croc Extra Sharp.

  19. Aldi has some very good sharp cheddars so does Trader Joe’s if you’re looking for the lower cost ones to try – if you’re looking for world class sharp cheddars they’ll cost you a pretty dime – and can run into the 100’s for a slice – of well aged perfection

    Move to Wisconsin and stop in some cheese factories. You can get 10-20yr aged cheddar for $20 a lb

    I bought some 7year cheddar from a dairy in Wisconsin and it was awesome.  My advice: call a couple small cheese makers in WI and ask what their oldest cheddar is and have it shipped.

    I gave up on this, too inconsistent. Their New York cheddar is my go-to now. I get several packs from Sam’s Club when I go
